There's going to be a time when you're asked to bring a covered dish or an appetizer to a party - and you can't bring something which needs to be served hot, or which needs to be refrigerated. THIS is my most irritating dilemma. What to bring? Well, I have a couple of things up my sleeve which can be made in advance and served at room temperature. And they are EASY.
Quiche - the ultimate room-temp buffet item.
Basic Quiche recipe
1 unbaked pie crust (use frozen or refrigerated - no one will know)
3/4 cup milk (I use evaporated milk)
salt & pepper (be careful with the salt - if your ingredients are salty, omit)
Bake pie crust without any filling for 7 minutes on 350. Add mixture of milk & eggs with your other fillings and bake for an additional 35-40 minutes or until set. Let cool. Serve at room temp.
Suggestions for fillings:
Roasted Red Pepper and Artichoke Quiche
1 jar drained chopped artichokes
1 small jar drained chopped roasted red peppers
6 oz jarlsberg cheese, shredded
6 oz diced cooked bacon (or CANADIAN bacon - yum)
How about a Reuben Quiche? (serve with thousand island dressing on the side)
6 oz chopped corned beef
6 oz chopped drained sauerkraut
6 oz shredded swiss cheese
Use your imagination - the possibilities are limitless!
